I have loved this recipe for years now!! It is so easy to make and I almost always have each ingredient in the house already. It is by far my favorite way to eat oatmeal! I love to make this on Sunday and warm it up for breakfast the rest of the week. Pair it with greek yogurt, dairy free whip cream or simply by itself, it is delicious!
INGREDIENTS
- 1 and 3/4 cup of almond milk (or whatever milk of your choice)
- 2 eggs
- 1/2 cup pure maple syrup
- 1/4 cup melted unsalted butter
- 1/4 cup unsweetened applesauce or mashed banana
- 3 cups old-fashioned oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- 1 1/2 cup frozen berries (I typically use a berry blend, but any of your favorites will work!)
INSTRUCTIONS
- Preheat oven to 350 degrees and spray your 9×9 or 11×7 baking dish. You could also use a muffin tin to make it easy to grab and go in the mornings!
- Mix all ingredients in a large bowl and pour into your baking dish.
3. Bake for 35-40 minutes or until oatmeal appears completely set.
4. Cool and enjoy!
